Egg curry is a unique vegetarian Indian dish. This is a great option to spice up some boiled eggs and get protein into our systems!

Prep time: 15 mins; Cook time: 15-20 mins; Serves 4-5

INGREDIENTS TO MAKE EGG CURRY MASALA:

  • Boiled eggs (shelled) - 5
  • Heavy cream / half & half (optional) - 1/2 cup
  • Salt (as per taste) - 1 tsp
  • Flavor Temptations Curry Sauce  - 1
  • Chopped cilantro (optional) - 2-3 stems

STEPS TO MAKE EGG MASALA WITH CURRY SAUCE:

  1. In a saucepan, combine masala sauce, heavy cream, salt.
  2. Cook covered on low heat for 4-5 minutes.
  3. Add boiled eggs and cook on medium heat for another 15-20 minutes.
  4. Uncover, simmer on low heat for 3-4 minutes until sauce thickens to salsa consistency.

SERVING SUGGESTION FOR EGG  MASALA CURRY:

Serve hot over bed of long-grained or naan bread

NOTE: if a garam masala spice pack is attached to the sauce, add it in step 4.

Does the sauce need to be refrigerated or frozen?

The curry sauce is shelf-stable and can be stored at room temperature. It needs to be refrigerated once it is opened.

Why is the Garam Masala spice packet provided separately?

Most Indian sauces in the market add Garam Masala spices into the sauce. Over time, their flavor could deteriorate. Finishing your dish with organic Garam Masala garnish makes the flavors 'pop'.
