INGREDIENTS TO MAKE ALOO MUTTER:
- Finely chopped onions - 1.5 cups;
- Peeled and chopped Ginger - 2";
- Peeled and chopped Garlic - 4-6 cloves,
- Diced tomatoes - 2 cups;
- Flavor Temptations Cumin seeds - 1 tsp;
- Flavor Temptations Curry Powder - 2.5 tsp;
- Flavor Temptations Garam Masala - 2 tsp;
- Potatoes (peeled and cut into 1' cubes) combined with green peas - 2 cups;
- Salt to taste - 1.5 to 2 tsp;
- Cooking oil - 2 Tbsp;
- Chopped cilantro - 6-8 stems (optional)
STEPS TO MAKE ALOO MUTTER:
- Toast Cumin Seeds in hot oil, add onions and cook until soft and transparent.
- Add ginger, garlic, tomatoes, and Curry Powder.
- Cook until tomatoes are soft.
- Add vegetables, cook covered until they are soft and have absorbed spices.
- Add Garam Masala and simmer until sauce has salsa consistency (add little water if sauce becomes too thick).
- Garnish with chopped cilantro.

Technically, you could use Curry powder or a common spice mix. However, this would not provide the authentic taste of traditional spice layering technique that is unique to Indian cooking
